Sweet and Sour Cauliflower

Ingredients
- 1Â large head cauliflower, cut into florets
- 1 c. all-purpose flour
- 2Â Eggs, beaten
- 2 c. panko breadcrumbs
- kosher salt
- Freshly ground black pepper
- 1 tbsp. olive oil
- 2Â cloves garlic, minced
- 1/2 c. apple cider vinegar
- 1/2 c. brown sugar
- 1/4 c. soy sauce
- 1/2 c. ketchup
- 1 tbsp. water
- 1 tbsp. cornstarch
- Green onions, thinly sliced, for garnish
- Sesame seeds, for garnish

Pantry List
- 1 bottle extra virgin olive oil
- 1 dozen large eggs
- 1 bottle apple cider vinegar
- 1 bottle soy sauce
- 1 bottle ketchup
- 1 box cornstarch
- 1 bag all-purpose flour
- 1 box Panko breadcrumbs
- 1 bag brown sugar
- 1 box kosher salt
Instructions
- Preheat oven to 375°. In a large bowl, combine flour and cauliflower, toss until fully coated.
- Set up a dredging station: In one bowl, add panko breadcrumbs and in another bowl whisk eggs and add 2 tablespoons water. Dip cauliflower in beaten eggs, then panko until fully coated. Transfer to baking sheet and season generously with salt and pepper.
- Bake until golden and crispy, 20 to 25 minutes.
- Meanwhile make sauce: Heat olive oil over medium heat. Add garlic and cook until fragrant, about 2 minutes. Add vinegar, soy sauce, brown sugar, and ketchup and stir to combine. Mix water and cornstarch together then stir into sauce. Let simmer until thickened.
- Toss together baked cauliflower and sauce. Garnish with green onions and sesame seeds.
