Monte Christo Breakfast Sandwich

Ingredients
- Cranberry Spread:
- â…“ Cup jellied cranberry sauce
- 3 Tablespoons orange juice
- 1 Tablespoon cream cheese
- Batter:
- ½ Cup skim milk
- 4 Eggs, beaten
- ¼ Cup water
- ½ Teaspoon vanilla extract
- 1 Cup flour
- 2 Teaspoons ground cinnamon
- 2 Teaspoons sugar
- 1 Teaspoon baking powder
- Sandwiches:
- 8 Slices crusty bread
- 8 Eggs, scrambled
- 8 Slices bacon, cooked
- 8 Slices deli-cut turkey breast
- Powdered sugar, if desired

Instructions
- To make the cranberry spread, combine cranberry sauce, orange juice, and cream cheese in a small bowl; set aside.
- To make the batter, whisk together milk, ½ cup liquid eggs, water and vanilla in a medium bowl.
- In another medium bowl, combine flour, cinnamon, sugar and baking powder. Make well in the center. Add milk mixture; mix to smooth batter.
- To make sandwiches, heat a flat griddle. Dip each bread slice in batter. Cook on griddle 2 to 3 minutes per side or until golden.
- Spread half the bread slices with cranberry mixture. Top with scrambled eggs, bacon, and turkey. Top with remaining battered bread slices. Cook in a heated Panini press or two-sided grill for 2 to 3 minutes or until golden.
- Cut the sandwich in half. Secure with toothpicks. Arrange on a plate. Sprinkle with powdered sugar, if desired.
