Monte Christo Breakfast Sandwich

Serves 4


  • To make the cranberry spread, combine cranberry sauce, orange juice, and cream cheese in a small bowl; set aside.
  • To make the batter, whisk together milk, ½ cup liquid eggs, water and vanilla in a medium bowl.
  • In another medium bowl, combine flour, cinnamon, sugar and baking powder. Make well in the center. Add milk mixture; mix to smooth batter.
  • To make sandwiches, heat a flat griddle. Dip each bread slice in batter. Cook on griddle 2 to 3 minutes per side or until golden.
  • Spread half the bread slices with cranberry mixture. Top with scrambled eggs, bacon, and turkey. Top with remaining battered bread slices. Cook in a heated Panini press or two-sided grill for 2 to 3 minutes or until golden.
  • Cut the sandwich in half. Secure with toothpicks. Arrange on a plate. Sprinkle with powdered sugar, if desired.
