This recipe makes 2 cups. Serve this Guacamole with Tortilla chips, as a side dish to scrambled eggs or on top of a grilled steak. 


  • While still in the husk, crisscross cut avocado. Scoop meat into a bowl. Add lime juice and salt. Mash avocado using the back of a wooden spoon. Add corn, chopped jalapeño, crushed garlic and fold ingredients. Top with cilantro and give it once final stir. Season to taste with more salt, pepper and lime juice, as needed.
  • Serve with Tortilla chips.
