Five Ingredient Green Eggs and Ham
- Avocado oil
- Baby spinach
- Sea salt
- Freshly cracked black pepper.
- Preheat the oven to 425°. Place bacon on a parchment lined, rimmed cookie sheet and bake straight from the refrigerator for 15-20 minutes.
- Place avocado oil in a non-stick pan over low to medium heat and let the oil come up to temperature, about 2 mins. Then add spinach and sauté. Add whole eggs into the pan and scramble together until cooked through. Season with sea salt and freshly cracked black pepper. Once the bacon is cooked to desired crispiness, remove from the oven, and chop into bits with kitchen scissors. Sprinkle bacon bits on top of the eggs and finish cooking.
