Faki (Greek Lentil Soup)
- Brown lentils
- Vegetable stock
- Red onion
- Bay leaves
- Red wine vinegar
- Feta cheese
- Olive oil
- Place lentils in a deep pot covered with water and place over high heat. Once they come to a boil, drain lentils into a colander.
- Place a stock pot over medium-low heat and add lentils, stock, onions, garlic, and bay leaves. Simmer with the lid on for 25 minutes.
- Pour in the olive oil and the red wine vinegar, and season well with salt and pepper. Boil the lentil soup for another 15 minutes, until it thickens.
- Serve this delicious Faki with a splash of red wine vinegar, a drizzle of olive oil and topped with crumbled feta cheese.
