Faki (Greek Lentil Soup)

Serves 6


  • Place lentils in a deep pot covered with water and place over high heat. Once they come to a boil, drain lentils into a colander.
  • Place a stock pot over medium-low heat and add lentils, stock, onions, garlic, and bay leaves. Simmer with the lid on for 25 minutes.
  • Pour in the olive oil and the red wine vinegar, and season well with salt and pepper. Boil the lentil soup for another 15 minutes, until it thickens.
  • Serve this delicious Faki with a splash of red wine vinegar, a drizzle of olive oil and topped with crumbled feta cheese.
