Carrot Waffles

Ingredients
- 2 cups whole spelt flour
- 2 teaspoon baking powder
- ½ teaspoon cinnamon
- 1 cup grated carrots, about 3 large carrots
- 2 cups almond milk at room temperature
- ¼ cup melted butter
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup, plus extra for serving
- Sea salt
Pantry List
- 1 block butter
- 1 can baking powder
- 1 container cinnamon
- 1 bottle vanilla extract
- 1 bottle maple syrup
- 1 box sea salt
Instructions
- Preheat a waffle iron
- In a large bowl, mix the flour, baking powder, flaxseed, cinnamon, and a pinch of salt
- In a medium bowl, mix together the grated carrots, almond milk, butter, vanilla, and maple syrup. Fold the carrot mixture into the dry ingredients and stir until just combined
- Scoop an appropriate amount of batter onto your waffle iron and cook until the edges are slightly crisp. Serve with maple syrup, if using
