Birthday Cake Cookies

- Unsalted butter
- Vanilla extract
- Powdered milk
- White chocolate chips
- Rainbow sprinkles
Instructions
- Sift together the flour, baking powder, baking soda, and powdered milk. Set aside.
- Beat the sugar, brown sugar, and butter together until light and fluffy (about 3 minutes). Add the egg and vanilla; beat until fully combined. Add flour mixture to the stand mixer and combine on low speed. Add in the white chocolate chips and sprinkles. Mix gently.
- Refrigerate dough for 30 minutes (at least 30 minutes, but up to 2 days is even better)
- Using a 1 Tablespoon measure, scoop rounded tablespoons and roll into balls. Place onto a parchment lined baking sheet. Bake for 10-12 minutes. Be careful not to brown these cookies. After baking, transfer cookies to the rack and let them cool down for 5 minutes before serving.
