Alaskan Cod Ceviche

Ingredients
- 1 lb Alaskan cod fillets, cut up in 1/4 “cubes
- 1/3 cup freshly squeezed lime juice
- ½ tsp Salt and dash freshly ground pepper
- 2 garlic clove, crushed
- 1 or 2 jalapeño chiles, minced
- ¼ cup green olives, sliced
- ¼ cup cilantro, chopped
- ¼ cup extra virgin olive oil
- Serve with tortilla chips
Shopping List
- 1 lb Alaskan cod fillet
- 3 Limes
- 1 head garlic clove
- 2 jalapeño chiles
- 1 small can green olives
- 1 bunch Cilantro
- 1 bag tortilla chips
Pantry List
- 1 bottle extra virgin olive oil
- 1 box Kosher Salt
- 1 container ground black pepper
Instructions
- In a bowl combine Alaskan cod filets, lime juice and salt and pepper. Toss together. Add on top with garlic, jalapeño chiles, green olives, cilantro and extra virgin olive oil. Mix together. Cover and allow to cure for 30 mins.
- Serve with a side of guacamole and tortilla chips.
