<p>Nonetheless, I&#8217;ve missed y&#8217;all.</p>
<p>What have you cats &#8216;n&#8217; kittens been up to? Stay&#8217;n outta trouble?</p>
<p>I started this on the 24th and it&#8217;s now the 28th. I&#8217;ve gone from Ketel One and Flaming Hot Cheestos, to a &#8217;97 Bollinger. I think I had a few glasses of Pinot Noir yesterday and the day before, and I think this is a Greyhound. Who knew a blog revival looks like a stairway to AA?</p>

<p>My heart rain-dancing like it&#8217;s on Burmese cat nip. I&#8217;ve had to pare down to only 15 of my favorites from 1247 images. It&#8217;s everything Ray Charles belts out <em>M&#8217; M&#8217; M&#8217; GOOD</em>. #SoGood. Every morsel presented these past 12 months from the classic my-mommy-makes-it-better-than-your-mommy to the mad scientist experiments. From the recipes that can only support the consumption of copious amounts of wine for sorority-dorm-room-boy-bashing-talk to the recipes I&#8217;ve made at home nurturing <em>The One. </em>And of course, discoveries I&#8217;ve made at restaurants, greasy spoons, barista bars and cheese caves. Lick your fingers clean puppies: I have recipes.</p>

            <div class="instructions">Put all the marinade ingredients in a sealable plastic bag large enough to hold the meat. Mix well and set it aside. Season the meat with salt and pepper and place  it in the bag of marinade, making sure all the surfaces get nicely coated. Seal the bag, squishing all the air out as you go, and put it in the fridge for at least 2 hours and up to 24 hours before grilling.  Be sure not to leave the meat in the marinade any longer than 24 hours, or the marinade will "cook" the meat and you will not be able to prepare it raw.

<em><strong> For the Dressing:  </strong></em>combine the vinegar, mustard, shallots, cumin, salt, and pepper in a medium size bowl and stir until salt has dissolved. Add the olive oils in a slow and steady stream, whisking as you go. Continue whisking until well emulsified. Reserve until needed.

&nbsp;

Steam the potatoes until fork tender, about 6 or 7 minutes. For the grilling, rub the potatoes with olive oil, sprinkle with salt and pepper, and set aside.  Grill the steak over a medium-hot fire to the desired doneness, about 2 minutes per side for rare.  Rotate the meat a quarter turn halfway through cooking on each side to get nice crosshatch grill marks. Let the meast rest while you grill the potatoes, also rotating them to get nice grill marks. Remove the potatoes to a platter and keep them warm.  Slice the steak on a slight angle into 2 pieces, saving any meat juices you can.

&nbsp;

Combine the cabbage, cilantro, chile, and bell pepper, and dress lightly with some of the salpicon dressing.  Lightly dress the potatoes too, and arrange them on a serving platter.  Top each slice of potato with 2 slices of steak and drizzle with reserved meat juices.  Top with a little mound of salpicon and a drizzle of dressing. Add a slice of avocado and 2-3 pieces of Asiago to finish.

            <div class="instructions">Cut each chicken into 10 pieces: 2 legs, 2 thighs, 4 breast quarters, 2 wings. Pour brine into a container large enough to hold the chicken pieces, add in the chicken, and refrigerate for 12 hours (no longer, or the chicken may become too salty).

Remove the chicken from the brine (discard the brine) and rinse under cold water, removing any herbs or spices sticking to the skin. Pat dry with paper towels, or let air-dry. Let rest at room tempertaure for 1 1/2 hours, or until it comes to room temperature.

If you have two large pots and a lot of oil, you can cook the dark and white meat at the same time; if not, cook the dark meat first then turn up the heat and cook the white meat. No matter what size pot you have, the oil should not come more than 1/3 up the sides of the pot. Fill the pot with at least 2 inches of peanut oil and heat to 320 degrees F. Set a cooling rack over a baking sheet. Line a second baking sheet with parchment paper.

Meanwhile, combine all the coating ingredients in a large bowl. Transfer half the coating to a second large bowl. Pour the buttermilk into a third bowl and season with salt and pepper. Set up a dipping station: the chicken pieces, one bowl of coating, the bowl of buttermilk, the second bowl of coating, and the parchment-lined baking sheet.

Just before frying, dip the chicken thighs into the first bowl of coating, turning to coat and patting off the excess; dip them into the buttermilk, allowing the excess to run back into the bowl; then dip them into the second bowl of coating. Transfer to the parchment-lined pan.

Carefully lower the thighs into the hot oil. Adjust the heat as necessary to return the oil to the proper temperature. Fry for 2 minutes then carefully move the chicken pieces around in the oil and continue to fry, monitoring the oil temperature and turning the pieces as necessary for even cooking, for 11 to 12 minutes, until the chicken is a deep golden brown, cooked through, and very crisp.  Meanwhile, coat the chicken drumsticks and transfer to the parchment lined baking sheet.

Transfer the cooked thighs to the cooling rack skin-side-up and let rest while you fry the remaining chicken. Make sure that the oil is at the correct temperature, and cook the chicken drumsticks. When the drumsticks are done, lean them meat-side-up against the thighs to drain, then sprinkle the chicken with fine sea salt.

Turn up the heat and heat the oil to 340 degrees F. Meanwhile, coat the chicken breasts and wings. Carefully lower the chicken breasts into the hot oil and fry for 7 minutes, or until golden brown, cooked through and crisp. Transfer to the rack, sprinkle with salt, and turn skin side up. Cook the wings for 6 minutes or until golden brown and cooked through. Transfer to the rack and turn off the heat.

Arrange the chicken on a serving platter. Add the herb sprigs to the oil (which will still be hot) and let them cook and crisp for a few seconds then arrange them over the chicken.</div></div></section></div>
